How to Store and Serve Your Crémant de Bourgogne Blanc de Blancs

Our Crémant de Bourgogne, 100% Blanc de Blancs, expresses all the finesse of Chardonnay. For optimal tasting, we recommend serving it chilled, between 7°C and 9°C. It is an ideal sparkling wine for an aperitif or to accompany fruity desserts. For storage, keep the bottles lying down, away from light and at a constant temperature (ideally between 12°C and 15°C).

What's the aging potential of your appellations?

Our white Burgundy wines are vinified to express their freshness from a young age, but also have excellent aging potential:
• Our Mâcon, Saint Véran, and Viré-Clessé wines are ideally enjoyed within 2 to 5 years to appreciate their fruitiness.
• Pouilly-Fuissé wines blossom beautifully after 2 to 8 years of aging in the cellar, developing more complex notes of dried fruit, honey, and forest floor, with buttery, toasted nuances.
• Our Crémants de Bourgogne retain their festive quality for 2 to 4 years

What dishes should I serve with a Pouilly-Fuissé?

Pouilly-Fuissé is a great, rich, and complex white Burgundy wine that calls for delicate and noble dishes. It pairs perfectly with:
• High-end seafood: Pan-seared scallops, grilled lobster, or langoustines.
• Fine fish: Pike-perch or wild sea bass served with a creamy sauce.
• White meats: Traditional Bresse poularde with cream and morels creates an absolutely magical regional pairing.
• Cheeses: An aged goat cheese from the Mâconnais (like Charolais) or an aged Comté.

What to pair with Saint-Véran?

Combining mineral freshness and floral roundness, Saint-Véran is a very versatile white wine that pairs well with many dishes. We recommend pairing it with:
• Seafood: A dill salmon tartare, almond trout, or fresh seafood (oysters, whelks).
• Summer and convivial cuisine: Frogs' legs sautéed with garlic and parsley (a local specialty) or an asparagus and parmesan risotto.
• As an aperitif: Its liveliness makes it an excellent starter, accompanied by homemade cheese gougères.

What are the best pairings with your Crémant de Bourgogne Blanc de Blancs?

Thanks to its delicate bubbles and the crispness of the Chardonnay grape, our Crémant de Bourgogne is perfect from aperitif to dessert:
• For an aperitif: Serve it plain to appreciate its purity, or pair it with delicate cocktail bites (crab verrines, light puff pastries).
• During the meal: It will pleasantly surprise your guests with a sushi and sashimi platter, or as an accompaniment to scallop carpaccio.
• For dessert: Avoid heavy chocolate and opt for a thin apple tart, citrus shortbread, or a frozen exotic fruit vacherin.

What dishes pair well with your Mâcon white?

Our Mâcon white is a delightful, fruity, fresh, and accessible wine. It's the perfect companion for simple, gourmet shared moments:
• As an aperitif: It's a unanimous hit with regional specialties like Lyonnaise grattons, diced parsleyed ham, or gougères.
• Everyday starters and main courses: Quiche Lorraine, summer salads, Sunday roast chicken, or fish terrines.
• With cheese: It pairs wonderfully with fresh or semi-dry goat cheese produced in our beautiful Mâconnais region.

With which dishes should I serve a Viré-Clessé?

Viré-Clessé is a unique appellation, renowned for its roundness, notes of ripe white fruits (peach, pear), and sometimes a hint of beeswax or peppermint. It calls for dishes with texture:
• Asian and exotic cuisine: Its natural roundness and beautiful aromatic persistence perfectly temper the spice of a shrimp curry with coconut milk or caramel pork.
• White meats in sauce: Sliced veal in cream, poultry cutlets with mushrooms, or rabbit with mustard.
• Hearty fish: Roasted salmon steak or monkfish medallion in an Armoricaine sauce.
• Strong cheeses: An Époisses (for a characterful regional pairing) or an 18-month aged Comté.
